1 large zucchini, grated
1 apple, grated
3 tblsp cocoa powder
1/4 cup natural Greek yoghurt
1/3 cup old fashioned oats
1/4 cup 70%+ dark chocolate chips (optional)
Preheat oven to 180 degrees Celsius. Line a square slice tin with non-stick baking paper.
Combine zucchini, apple, cocoa powder and egg. Let sit for about 15 minutes (this allows some of the moisture to be drawn out of the zucchini).
Stir in yoghurt, oats and chocolate chips (if using).
Spoon into prepared tin and smooth the top with the back of a spoon. Cook for 20 minutes.
Once removed from oven, allow to sit on a cooling rack.
