This slice is refined sugar free and gets its sweetness from dried fruit (which is also a great source of fibre). It doesn’t need to be kept refrigerated so makes a great lunchbox item for kids and adults alike.
1 cup of mixed dried fruit
2 tblsp sunflower seeds
2 tblsp pumpkin seeds (pepitas)
1 tblsp chia seeds
1 cup of desiccated coconut
1/2 cup rolled oats
1 cup natural Greek yoghurt (with no added sugar)
Pre-heat oven to 160 C. Line a square slice tin with non-stick baking paper.
Combine all ingredients except yoghurt in a large bowl and stir until combined.
Mix in yoghurt and stir until all dry ingredients are covered in yoghurt.
Spoon mixture into prepared tin. Spread evenly and smooth the top with the back of a dessert spoon. Bake in oven for 20 minutes or until the edges begin to turn golden brown. Remove from oven and allow to cool in tin for at least five minutes before transferring to a cooling rack. Allow to cool completely before cutting into 16 squares.
